Texas Pineapple

Texas Pineapple CocktailEvery summer we go on vacation to a resort on Lake Michigan. It’s a week filled with family, good friends, sun, and alcohol. I usually take the ingredients for a specialty drink for the week. In the past, I’ve done Pink Panty Droppers and Long Island Iced Teas. This year, I thought I would do something a little simpler – the Texas Pineapple.

Here are the ingredients – vodka and pineapple. The instructions are just as easy – place cut up pineapple in a large container, pour vodka over, let set for two weeks. No need for refrigeration.

Seems simple, right? 

And it would have been, if only the pouring spout on the large container had been sealed tight. 

To my absolute horror, when I poured the vodka into the large container, the vodka started leaking out. That’s right, let me say it again – THE VODKA STARTED LEAKING OUT!

I had to scramble to get the vodka out of its current container into something else and by the time I was done, I probably lost about a third of the vodka.

It was sooooo sad.

Currently, the concoction is sitting on my counter. I kind of have a love/hate relationship with it now. I can still see the vodka flowing from the container down the drain and it breaks my heart. 

But, every now and then as I go by, I give it a little swirl. It’s got about 9 more days before it’s done melding together and I know, in the end, that first taste will be worth that dark day of assembling it.
